Healthy Energy Balls Recipe with Dates || A simple, no-bake, super yummy and healthy snack, these energy balls are naturally sweetened with dates and maple
Our snack routine was in need of a little change-up, some added variety to our regularly scheduled muffin and granola bar rotation. And so, this healthy energy ball recipe with dates came to be. Faster to make than muffins and granola bars, loaded with healthy energy boosting ingredients and so delicious it’s impossible to have only one.
What you should know about these really yummy, healthy energy balls.
- This recipe is nut-free and school lunch-ready (high fives!).
- It is literally impossible to have just one. But the good news is these sweet healthy energy bites are naturally sweetened with dates and maple syrup and loaded with toasted rolled oats and shredded coconut. So have two…maybe even three.
- Make it gluten-free by used gluten-free certified oats.
- Ready to eat in 15 —and that’s counting the time to toast the oats and coconut—so let’s call this a win.
How to make this healthy energy balls recipe with dates:
Ok, let’s get down to business and make these energy balls.
- Seven ingredients: dates, maple syrup, coconut oil, vanilla, kosher salt, unsweetened shredded coconut, and rolled oats.
- Tools: food processor, baking sheet, handy cookie scoop (helpful but not essential).
- The process:
- Place oats and coconut on a baking sheet and toast for 10 minutes at 350 degrees. Meanwhile, in a food processor, pulse dates, maple, vanilla, coconut oil, and salt until semi-liquidy and paste-like. *The mixture does not need to be smooth, and little bits of dates will add texture to the balls.*
- Next, toss the toasted coconut and oats right into the food processor. Pulse until well combined. Again, we’re not looking to process until smooth. Now, take your handy cookie scoop—I use this one—and get scooping. Using a scoop will help make them all the same size, plus it’s the super speedy way to go.
- Now, take the scoops, give them a squeeze and gently roll them between your palms into a perfect round ball. *Before forming the balls, rub a tiny bit of coconut oil onto your hands and there will be no stickiness to deal with! Not to mention all the moisturizing benefits of coconut oil:)
And that’s how you end up with these healthy energy balls.

Healthy Energy Balls Recipe with Dates
- 1 cup pitted dates packed slightly
- 2 tbsp pure maple syrup
- 1 tsp coconut oil solid or liquid
- 1 tsp vanilla
- pinch of kosher salt
- 1/2 cup unsweetened shredded coconut toasted
- 1/2 cup large rolled oats toasted
- Preheat oven to 350 degrees. On a baking sheet combine and spread out shredded coconut and rolled oats. Toast for 10 minutes until golden and fragrant.
- Meanwhile, in a food processor, add pitted dates, maple syrup, coconut oil, vanilla, and a pinch of kosher salt. Pulse until semi-liquid and paste-like, with bits of dates still intact.
- Add in the toasted coconut and oats and pulse until well combined. The mixture will not be smooth. We’re looking for texture, lots of sticky, tasty texture.
- Using a small cookie scoop (a spoon or your hands will work too) make the balls, give them a squeeze, then roll the balls between your palms until smooth and round. *Adding a tiny bit of coconut oil to your hands before rolling will prevent them from sticking to you.
