These chocolate peanut no-bake energy bites taste like an Oh Henry chocolate bar but are made with healthy, feel-good ingredients, including cocoa powder, peanuts, dates, maple, oats, and shredded coconut.
About these no-bake energy bites
In addition to being a healthy and delicious treat, these energy bites come together in a matter of minutes, using a food processor and my favorite Oxo cookie scoop (which I reference in every other blog post because they are SO handy and can be used for EVERYTHING — see meatballs, more energy balls, breakfast cookies…).
What you’ll need for these no-bake energy bites
Tools
- A food processor
- Oxo cookie scoop — not essential, but a scoop makes this quick recipe even quicker.
Ingredients
- Maple syrup
- Roasted unsalted peanuts (raw work too)
- Cocao powder
- Pitted dates
- Unsweetened shredded coconut
- Rolled oats
- Coconut oil
- Plus vanilla and a pinch of salt
How to Make Chocolate Peanut No-Bake Energy Bites
- Add all ingredients to the food processor at once and pulse on high until well combined and sticky (there will be lots of coarse bits — we’re not aiming for a paste). Use a spatula to scrape any ingredients from the sides back into the mix. Don’t worry, the mixture will look loose and crumbly (like in the photo above), but it’s very sticky and will easily come together once scooped and rolled between your palms.
- I find a small cookie scoop helps form the balls by ensuring you scoop the same amount each time. If you don’t have a cookie scoop, a regular spoon works just fine.
- Give the scooped mixture a firm squeeze to bind, then lightly roll between your palms to make round, uniform balls.
- A tiny dab of coconut oil rubbed between your palms will help the mixture from sticking while you roll.
Just a warning, these will disappear quickly, and making a second batch that you hide keep in the freezer is a solid plan.

Chocolate Peanut No-Bake Energy Bites
Equipment
- Food processor
- Small cookie scoop – optional – or use a spoon to scoop
Ingredients
- 1 cup roasted unsalted peanuts
- 2 tbsp cocoa powder
- 3 tsp vanilla extract
- 2 tbsp pure maple syrup
- 1 tsp coconut oil
- 1/4 cup rolled oats
- 1/3 cup unsweetened shredded coconut
- 1 cup pitted dates
- pinch of kosher salt
Instructions
- Add all to a food processor and process on high until well combined and sticky. The mixture will look loose but will come together to form balls easily by using a small cookie scoop and some manual rolling.
- Give them a firm squeeze between your palms so everything sticks together, then gently roll into a circle.
- Makes 26-28 balls.
