Equipment

  • Food processor
  • Small cookie scoop - optional - or use a spoon to scoop

Ingredients

  • 1 cup roasted unsalted peanuts
  • 2 tbsp cocoa powder
  • 3 tsp vanilla extract
  • 2 tbsp pure maple syrup
  • 1 tsp coconut oil
  • 1/4 cup rolled oats
  • 1/3 cup unsweetened shredded coconut
  • 1 cup pitted dates
  • pinch of kosher salt

Instructions

  • Add all to a food processor and process on high until well combined and sticky. The mixture will look loose but will come together to form balls easily by using a small cookie scoop and some manual rolling.
  • Give them a firm squeeze between your palms so everything sticks together, then gently roll into a circle.
  • Makes 26-28 balls.

Notes

  1. Use a spatula to scrape any ingredients from the sides back into the mix. Don't worry, the mixture will look loose and crumbly, but it's very sticky and will easily come together once scooped and rolled between your palms.
  2. I find a small cookie scoop helps form the balls by ensuring you scoop the same amount each time. If you don't have a cookie scoop, a regular spoon works just fine.
  3. A tiny dab of coconut oil rubbed between your palms will help the mixture from sticking while you roll.
