Asian Salad with Tamari Peanut Dressing

Ingredients
  

Salad

  • 2 cups iceberg lettuce chopped
  • 2 cups green leaf salad — I use arugula here
  • 1/2 red bell pepper washed and chopped
  • 1/2 yellow bell pepper washed and chopped
  • 1 cup shredded carrot
  • 1/4 cup fresh mint roughly chopped
  • 1/2 cup roasted unsalted peanuts roughly crushed - throw them in a ziplock bag and roll a rolling pin over them once or twice
  • 1 ripe avocado sliced lengthwise, pitted and chopped into bites
  • 1 tsp black sesame seeds to garnish
  • 1 tsp sesame seeds to garnish

Dressing

  • 2 tbsp walnut oil sub - olive oil
  • 2 tbsp peanut butter
  • 2 tbsp cold filtered water
  • 1 tbsp tamari sub - soya
  • 1 tbsp maple syrup sub - honey
  • 1 small clove of garlic minced
  • juice of half a lime

Instructions
 

  • In a large mixing bowl, toss salads, veggies, mint, avocado and peanuts.
  • In a small mason jar, combine dressing ingredients and shake vigorously until well combined and smooth.
  • Pour dressing over salad and toss until really well coated—don't skimp on the dressing!
  • Divid into two lovely big salad bowls to serve as a main for two or leave in larger bowl to serve as a side. Garnish with black and white sesame seeds. Enjoy!
